I crave salty snacks more then I do sweets; but for some reason, I felt a little hungry for a cookie. I had some dark chocolate chips so I decided to try chocolate chip peanut butter cookies. When eating on a whole food plant-based diet there are still options for sweet treats. The best flours to use are almond or coconut flour; or even whole wheat flour.
The cookies did fall apart easily if not left to cool long enough and are super peanut buttery but I think you will still enjoy them. If you aren’t a peanut butter lover, I wouldn’t suggest trying these. You could probably use the same recipe but substitute almond or cashew butter for the peanut butter.
Dark Chocolate Chip Peanut Butter Cookies
Ingredients
- 1/2 cup natural peanut butter (peanuts should be the only ingredient)
- 1/3 cup date sugar
- 1 tsp vanilla
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 cup dark chocolate chips (vegan)
Instructions
- Preheater oven to 350 degrees F.
- In a medium-sized bowl, mix together the peanut butter, date sugar, vanilla, flours, and baking soda.
- Fold in the chocolate chips.
- Roll dough into 1" balls and place on a non-stick baking sheet or baking sheet lined with parchment.
- Flatten each dough ball with a fork or the bottom of a glass.
- Place in oven and bake for 12 minutes.
- Allow cookies to cool for 5-10 min before removing from the baking sheet. If you remove them too early they will be falling apart.
