You can make this taco soup in an instant pot or in a pot on the stove. This recipe is similar to traditional taco soup but is meatless.
In this recipe, I use my own vegan ranch seasoning and taco seasoning. You can use your own seasoning if you choose. The recipes for seasoning mixes on this website will have much less sodium than premade seasoning mixes you find in the store.
I also use fresh jalapenos to give it a kick. If you don’t want it to be as spicy just leave out the jalapenos.
Taco Soup
This taco soup is vegan and whole food plant based with no oil. You can make this in the instant pot or on the stove top.

Ingredients
- 2 15 oz cans black beans, rinsed and drained
- 1 15 oz can pinto beans, rinsed and drained
- 1 28 oz can diced tomatoes
- 2 cups vegetable stock
- 1/2 cup water
- 2 jalapenos, diced
- 2-1/2 tbsp taco seasoning (see recipe below)
- 2 tbsp vegan ranch seasoning (see recipe below)
- chopped avocado and cilantro for toppings
- air fryer tortilla strips for topping (see recipe below)
Instructions
- Add all ingredients to instant pot or stockpot on the stove. Stir.
- If using instant pot set to soup setting for ten minutes, do a quick release and serve.
- If cooking on stovetop cook over medium heat for 10 minutes or until it starts to simmer.
- Reduce to medium-low stirring occasionally. Cook for 20 more minutes.
- Top with fresh cilantro, avocado, and tortilla strips.
Taco Seasoning
This makes about 2.5 tablespoons.

- 1/2 tbsp cumin
- 1 tbsp chili powder
- 1 tsp chipotle powder, ground red
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cilantro, dried
- 1/2 tsp smoked paprika
- 1/2 tsp pink Himalayan sea salt, optional
Instructions
- In a small bowl, mix together all ingredients.
- Store in an airtight container if not using immediately.
Vegan Ranch Seasoning Mix
This recipe can easily be doubled, tripled or even quadrupled to store for later!

- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp parsley flakes
- 1 tsp dill
- 1 tsp thyme leaves
- 1 tsp nutritional yeast
Instructions
- Mix all ingredients together in a small bowl.
- Use for dips and dressings.
- Store in an airtight container.
Air Fryer Tortilla Strips
You can make these in an Air fryer or in the oven. If you using an oven, bake on a parchment-lined baking sheet, bake a 350F for 10 minutes or until crispy.These are great for a soup or salad topping.

Instructions
- Cut tortillas in half then into 1/4" strips.
- Place in the air fryer and cook at 350F for 6 minutes.
