Blueberry Pie Muffins

These muffins taste like blueberry pie! They are vegan, vegetarian, whole food plant based, no oil.
This recipe makes 12 muffins.

Ingredients

  • 2 tbsp ground flaxseed
  • 4 tbsp water
  • 1 cup coconut flour
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1/2 cup date sugar
  • 1 tsp cinnamon
  • 1/4 cup maple syrup
  • 1/2 cup oats
  • 1 cup plant milk (I use unsweetened coconut)
  • 2 cups fresh blueberries

Instructions

  • Preheat oven to 350F.
    Mix together flaxseed and water in a mall bowl, set aside. This is used as a binder, instead of using an egg in a recipe.
  • In a large bowl mix together flour, baking powder, date sugar, cinamon.
  • Stir in maple syrup, oats, plant milk, and reserved flax mixture.
  • Fold in blueberries.
  • Distribute evenly into a lined muffin tin. This makes 12 muffins.
  • Bake for 35-40 minutes. 35 minutes was enough in my oven.
