What makes us feel better? A bowl of warm soup. Sometimes when we are sick that is the only thing that tastes good to us. <\/p>\n\n\n\n<p>Eating a plant based diet or vegan diet, you can still have a healthy soup that tastes similar to chicken noodle soup. In this recipe, I use chickpeas as the protein instead of the chicken and vegetable stock instead of chicken stock. You can use any pasta or noodles that you like. If you would like even more protein in the meal use a chickpea or lentil pasta. <\/p>\n\n\n\n<p>This soup contains celery, carrots, onions, and garlic. This is such a nutritious meal that will help you to heal when you aren&#8217;t feeling well.<\/p>\n\n\n\n<p>I love making my soups in the instant pot because I can add all the ingredients at the same time and forget about it. Even if your veggies aren&#8217;t fully cooked, they won&#8217;t make you sick. Eating plant based is so much less stress in my opinion.
