Dark Chocolate Chip Peanut Butter Cookies

This is a yummy whole-food plant-based (vegan) cookie for peanut butter lovers! This recipe makes 12 cookies.

Ingredients

  • 1/2 cup natural peanut butter (peanuts should be the only ingredient)
  • 1/3 cup date sugar
  • 1 tsp vanilla
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 cup dark chocolate chips (vegan)

Instructions

  • Preheater oven to 350 degrees F.
  • In a medium-sized bowl, mix together the peanut butter, date sugar, vanilla, flours, and baking soda.
  • Fold in the chocolate chips.
  • Roll dough into 1" balls and place on a non-stick baking sheet or baking sheet lined with parchment.
  • Flatten each dough ball with a fork or the bottom of a glass.
  • Place in oven and bake for 12 minutes.
  • Allow cookies to cool for 5-10 min before removing from the baking sheet. If you remove them too early they will be falling apart.
