CHickpea and Noodle Soup – Vegan and whole food plant based, no oil

The time of year for cold and flu season is upon us. What makes us feel better? A bowl of warm soup. Sometimes when we are sick that is the only thing that tastes good to us.

Eating a plant based diet or vegan diet, you can still have a healthy soup that tastes similar to chicken noodle soup. In this recipe, I use chickpeas as the protein instead of the chicken and vegetable stock instead of chicken stock. You can use any pasta or noodles that you like. If you would like even more protein in the meal use a chickpea or lentil pasta.

This soup contains celery, carrots, onions, and garlic. This is such a nutritious meal that will help you to heal when you aren’t feeling well.

I love making my soups in the instant pot because I can add all the ingredients at the same time and forget about it. If you don’t have an instant pot you can make this on the stove in a dutch oven or soup pot.

Soups are so much easier to make when you don’t have to worry about the meat being chopped and cooked the whole way. Even if your veggies aren’t fully cooked, they won’t make you sick. Eating plant based is so much less stress in my opinion. Even if you aren’t vegan or on a plant based diet, give this alternative to chicken noodle soup a try.

Chickpea and Noodle Soup

Equipment

  • instant pot, soup pot or dutch oven

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 carrots, peeled and diced or sliced
  • 4 celery ribs, chopped
  • 1 15 oz can chickpeas, drained and rinsed
  • 8 cups vegetable stock
  • 3 dried bay leaves
  • 2 tbsp dried parsley leaves
  • 1 tsp onion powder
  • 2 cups uncooked pasta (or rice) of your choice
  • salt and fresh ground pepper to taste

Instructions

If you are using instant pot:

  • Add all ingredients to the instant pot.
  • Stir.
  • Set instant pot to soup setting for 4 minutes.
  • After 4 minutes is up, do a quick release.
  • Remove bay leaves and serve.

If using dutch oven or pot on the stove:

  • Add all ingredients except pasta to pot or dutch oven over medium-high heat.
  • Bring to a boil.
  • Once boiling, add pasta and stir.
  • Cover and cook for the time required on the pasta box.
  • When pasta is cooked through the soup is ready.
  • Remove bay leaves and serve.
